Sustainability from prep to plate

Located in the heart of Nottingham, Bar Iberico offer tapas style dishes inspired by flavours and techniques from Mediterranean and Asian culture.

Like most hospitality venues, Bar Iberico were previously disposing of all their food waste in in their general waste bins. When they realised this was not the most sustainable option, they tasked themselves with finding a more environmentally friendly way of handling their food waste.

That’s where Flame UK came in. We provided the restaurant with separate food waste bins to segregate the food waste from their general waste. Any food waste from the kitchen or from customer’s plates was separate into food bins with a collection six times a week. Through our network of approved suppliers, we’re able to turn this food waste into biofuel by Anaerobic Digestion to prevent their food waste from going to landfill. Since working with Flame UK, Bar Iberico have been able to divert 6.4 tonnes of food waste from landfill since January 2023.

Not only did this reduce the amount of general waste the restaurant was producing, it also turned their food waste into a new product. All this has led to a lower carbon footprint for the restaurant, helping them to achieve their sustainability goals. By reducing the amount of general waste they’re producing, they’ve also seen a dramatic reduction in their waste costs too.

With Flame UK’s help, Bar Iberico have been able to achieve their sustainability goals:

  • The amount of general waste they produce has been reduced, cutting their waste management costs
  • All food waste is now separated from general waste and collected multiple times during the week.
  • Food waste is now recycled and turned into biodiesel, used to power the trucks that come to collect it.
  • 6.4 tonnes of food waste diverted from landfill since working with Flame UK for four months.
