Waste management to savour

Good Table and Cheer is the second generation family hospitality business behind some of Nottinghamshire’s most loved eateries:

  • Perkins – opened as a restaurant in 1982 in the old Plumtree railway station, now a hugely popular bar and bistro.
  • The Carriage Hall – a luxury wedding and events venue, close to Perkins.
  • Escabeche and Baresca – thriving Spanish tapas bars in West Bridgford and Nottingham city centre.

The company only realised how poor its waste management service was when the previous contractor went out of business and Flame UK took over. Drawing on our waste consultancy experience, we carried out a full assessment and immediately identified ways to improve things – tailored to each venue’s different circumstances.

Not surprisingly, Good Table and Cheer deals with a lot of food waste, as well as cardboard, plastics and glass. At Perkins and The Carriage Hall, opportunities to recycle were being missed, and the business was paying heavily for five different bin collections – with additional fees for excess weight.

We suggested installing a cardboard crusher on the Plumtree site to reduce waste volume. The tapas bars had no room for such equipment, but we’ve streamlined waste processes and overseen all collections.

The overall results have been dramatic:

  • Good Table and Cheer’s waste costs have been cut by two thirds.
  • The compactor at Perkins has tripled the amount of waste in each bin – meaning the company is paying for far fewer collections.
  • The site is less cluttered and safer.
  • Waste sorting is now more rigorous and recycling rates have increased.
